Saffron, coming from the magnificent Crocus Sativus flower, is one of the most luxurious and sought-after products in the world of gastronomy and spices. At the heart of Persian culture for more than 4,000 years, echoing the grandeur of Ancient Persia where it was used as royal ink for the Shah, artistic pigment for painting, traditional remedy and, of course, spice culinary. Persian historical and mythological writings reveal its multiple uses, testifying to its importance particularly in traditional Persian medicine to soothe pain, for its cosmetic virtues and its aphrodisiac power. ​

​The quantity of flowers required to produce 1g of this saffron is approximately 150 to 200 Crocus Sativus flowers, further highlighting the exclusivity and preciousness of this spice. As each flower is carefully picked by hand to extract its precious pistils, one can imagine the degree of work and precision required to produce such quality saffron. ​​

Origin and search for excellence

Our Negin Saffron variety comes from the prestigious Khorasan region, recognized worldwide as the cradle of saffron and responsible for more than 85% of global production. The mission of the Golestan brand is to share this unique wealth of our country by offering the most exclusive variety of saffron from Persia. For this, we have carefully explored the lands of Khorasan in search of the most refined and pure saffron in the region, meticulously choosing our producer directly at the source.​

Thanks to the work of our experts on site, we have evaluated each variety according to rigorous criteria and analyzes in Switzerland to define the best saffron. Our criteria are as follows:​

  • pistil length (1 to 10).
  • the intensity of the red color (1 to 10)​
  • the cutting of the pistil, only the pistil without mixing with yellow parts of the pollen of the flower (without culinary power)​
  • the level of safranal (aroma)​
  • the crocin level (coloring power)​
  • picocrocin (taste) ​
